Why a real bakery changes everything
You can open a café with bread delivered every morning by a supplier. Plenty do, and there's nothing wrong with it. We chose the opposite: to make our bread ourselves, here, in Targa. It's more work, earlier in the morning, and that is precisely what sets us apart.
Bread kneaded on site means a crust that still crackles, warm, the moment it's served to you, a crumb that smells of fermentation and not of additives, and a team that knows exactly what's inside it. In Marrakech, few addresses combine café, restaurant and a house bakery under the same roof. That's our difference, and we hold on to it.
It also changes the way you eat. Bread is no longer the afterthought you push to the edge of the plate: it becomes part of the meal, to spread with amlou at breakfast, to mop up a shakshuka at lunch, to simply break with a little olive oil. When the bread is good, the whole table shifts in tone.
« Bread isn't delivered to us. It rises, it's shaped and it's baked right here, every morning. »
Sourdough bread: patience and fermentation
Levain is not an ingredient, it's a living thing you keep alive. A mix of flour and water that you feed, that ferments slowly and gives the bread its gentle tang, its open crumb and its natural keeping quality — without any industrial yeast.
This slowness has a price: you have to plan the day before, let time do its work, accept that no bake is ever quite identical to the last. That is exactly what fast production doesn't allow. Sourdough bread demands patience, and that's what makes it better — more digestible, more fragrant, more honest.
The morning bake
Our breads come out of the oven in the morning, just as Targa wakes up. When you push the door for a coffee or a brunch, that's the bake you'll find in the basket. Not the day before, not reheated: same-day.
Butter viennoiseries, shaped by hand
A successful viennoiserie starts with real butter and time spent laminating. The flaky layers are built up turn after turn, rest after rest. You feel it at the first bite: a butter viennoiserie comes apart in fine golden layers, never in a compact, greasy crumb.
It's that work you find in our morning sets and in our display of treats. Viennoiserie in Marrakech deserves better than the frozen industrial sort — and that's what we try to prove every day.
The right instinct: come early. The morning viennoiseries go fast, and a croissant picked up within the hour after baking has nothing in common with one nibbled at the end of the day. That's also why we open at 8am — so the first bake comes back to you at its very best.
A few treats from the display
Moroccan breads: msemen, harcha, batbout, baghrir
A bakery in Targa wouldn't be complete without our own home breads. The flaky msemen, the harcha golden with semolina, the soft batbout and the thousand-hole baghrir: all prepared on site, never frozen, like at home but with the consistency of a bakehouse.
We serve them by the piece at the beldi corner, or brought together in our Beldi breakfast with olives, amlou, pure honey and olive oil. It's the bridge between Moroccan tradition and the baker's craft — and it's that blend that gives Crusthy'lia its soul.

Where and when to find us

Booking is done simply on WhatsApp — a real person on the team replies to you. You can also order takeaway or have it delivered: we're on both our Glovo stores, one for catering and one for the bakery-patisserie.
Frequently asked questions
- Do you make your own bread?
- Yes. All our bread is kneaded, shaped and baked on site in Targa, every morning. We don't have bread delivered: the sourdough bread, the butter viennoiseries and the Moroccan breads (msemen, harcha, batbout, baghrir) come out of our own bakehouse.
- Are your viennoiseries made with butter?
- Yes, our viennoiseries are worked with real butter, with lamination shaped by hand and several resting times. You'll find them in our morning sets and in our display of treats.
- Is everything halal?
- Yes, our whole menu is halal: no pork. The cured meats are smoked turkey or khlii, and the common allergens are flagged on each set — don't hesitate to ask us when you order.
